The restaurant is mainly duck liver specialities . The chef has at least seven ways to appreciate it, from $13 to $25, but also to associate this so sweet taste to other components like salad of red cabbage .
May be the best is the duck liver in raviole, with parmesan cream.
Meats, beef, veal, chicken, duck, lamb are prepared on grill (filet, tenderloin Kobe, roasted lamb and pearsley with mustard and spices), poached (chicken filet with black trufles sauce, veal cooked in lime sauce), veal rib with roasted garlic and morilles, etc.
The side-dished sauces are classicals like with Kampot pepper (labelled of origin country), with roquefort ( cheese from ewe) cream and mushrooms, Café de Paris (butter and anchovies), etc.
Shellfish and fishes from $14 to $25 have an impressive range on the menu. The panfried pavé of salmon withsesame seed lime butter sauce and kampot green peppert, the rougets stuffed with tapenade (black olives and butter) and its safran sauce, the sea bass fillet with orange sauce, etc. The supreme de merou, stewed with spinach, and ratatouille juce is a good choice for an healthy temptation.
The sea offers the grouper, braised in white wine or the sea bass marined with orange sauce. A new coming : the scallops with bacon in a sauce made with palm wine from the Kompong Speu province.

Check on the menu the fish just arrived like the wild sole and potatoes, the skate wing and caprese cream, the trout and almonds, the stuffed squids.  Ce restaurant merite vraiment le detour amicalement Pierre André de Mainonville "Aménagé dans une ancienne résidence princière; le Restaurant « La Résidence » à Pnom Penh; offre à la fois la sérénité d’un lieu select de détente et de confort cossu; dans un décor d’une extrême délicatesse. – Le Chef Japonais; auréolé de ses étoiles Michelin; traite ses hôtes en les entraînant dans la ronde des subtilités de son art; que les palais gourmands découvrent avec surprise et enchantement. Cette ‘’Résidence’’; vraiment royale; mérite le détour. Notre opinion se trouve confortée par les avis de nombreux amis appartenant à différents pays; revenus enchantés de leur découverte. Ben que proposant des crus à 1000 Dollars; la Résidence laisse accès à des produits de classe pour un prix très abordable au regard de la qualité: (30 Dollars en base) .
